RACHEL'S KITCHEN Since I've been living in the country, I've almost (but not quite) taken for granted the fact that there is always a delicious abundance of freshly laid eggs around. The humble egg has to be one of the most versatile ingredients in the kitchen - whether you are having breakfast, lunch or supper, or just feel like doing a bit of baking.

It makes such a huge difference to me when the egg is a free- range one with a rich, yellowy orange yolk and a creamy - almost buttery - flavour. A really good egg can turn a simple meal of a boiled egg with soldiers, or an omelette, into something special and give your cakes a rich flavour that is impossible to replace.
