ATUL KOCHHAR was the first Indian chef to be awarded a coveted Michelin star in Britain. Born in Jamshedpur, eastern India, he made his name in London at the Tamarind restaurant before leaving to set up his own establishment, Benares, in London's Berkeley Square. Following in the footsteps of Gary Rhodes and Marco Pierre White, Atul has taken his cuisine afloat with P&O Cruises. He will have his own restaurant on board the new ship Azura when it joins the P&O fleet in April.
I'm known for offering modern Indian cuisine with a British twist - and this is what I will be concentrating on in my new restaurant on board Azura. The star attraction of my menu, of course, will be chicken tikka masala. It has become Britain's favourite dish, so it has to be the highlight.
