Former Army chef Chris Wittwer was dropped in the deep end when he became a pub landlord he had to cope with more than 100 customers on the first night. 'It was mad, but we got through it,' says Chris, who took over the Royal Oak in Exminster, Devon, last year and who is just one of thousands who each year decide to run one of Britain's 59,000 pubs.
