Frying is not a dirty word, despite what the health police would have us believe. These flaccid-tongued puritans are on a mission to destroy this noble art, painting a perilous picture of hardened arteries and early, agonising death. Steam, bake, grill, they exhort anything but the barbarous pan. And so the technique's image lies shattered, for ever associated with over-battered Mars Bars, pallid complexions and the stench of stale grease.
