I'VE ALWAYS been fascinated by big ships, going back to the days of the famous White Star vessels Britannic and Olympic. My London restaurant company is called White Star Line and some of the decor has been based on designs and Art Deco drawings from the Queen Mary.

I love that era; the romance of transatlantic liners such as the Normandie and the wonderful stories that surround them. So when I was approached by PO Cruises to team up with it on its new Pounds 300million superliner Ventura, due to be launched in April next year, I was immediately interested.
