Summary


There are few desserts and treats that white chocolate hasn't found its way in to. From cheesecakes and tiramisus to mousses, ice cream and cookies, pale white chocolate is a surprisingly versatile ingredient and has a velvety smooth texture.

White chocolate is unusual in that it contains no cocoa solids. So where milk chocolate may have 40% and dark chocolate up to 90%, white chocolate has none of that bitter chocolate flavour. Instead its taste is sweet, usually flavoured with vanilla.
